Our host in Carville was the winner of the Jambalaya Festival in 1992 and, I think a few subsequent years as well. Unfortunately, we didn't get to sample any, but had some nice meals in the cafeteria there. While visiting some offices during our assessment, we ran into someone our host began talking with. During the conversation, the subject of cooking came up, and some guy who was painting a door said to him, "You cooked the jambalaya for my wedding." Then some other guy came out of an office and said, "You cooked the jambalaya for my wedding too." A guy walking by said something like, "Me too." I have a feeling we were in the presence of a well-liked celebrity.
